Vanilla Ginger Kale Smoothie: Your Kids Might Drink It

This is a green smoothie that tastes more like dessert than green goodness.  It does go down a lot like a cold melted ice cream shake.  With kale.

My kids will drink this if I call it a “Green Monster Drink” or a “Hulk Smoothie”.  It is probably the only way they would ever swallow a molecule of kale.

I use baby kale because it is less bitter.  Soaking the cashews and dates overnight require some forethought but ensures a very creamy texture.  Also, the bananas are best if frozen.

It’s easy.  It’s delicious.  And it falls somewhere between an organic donut and an all-green smoothie as a healthy breakfast food!

Vanilla Ginger Kale Smoothie

1 1/2 c. water

1/4 c. cashews

4 dates

1 c. kale (stuffed and packed full, don’t wimp out on the greenness!)

1 banana, frozen

1/2 t. vanilla extract

1″ piece of ginger, peeled and minced

1/2 c. ice cubes

Soak the cashews and dates in the water overnight.

In the morning, combine the cashew/date/water mixture with the remaining ingredients in a high speed blender.  Blend until smooth and creamy and enjoy!
