Ginger Cake Smoothie

DSCN9651.JPGThe title is the only way to describe this smoothie.  Yes, it’s green but the spinach flavor in it is undetectable.  Close your eyes and it is spicy, vanilla-scented ginger cake.

The mulberries give it the vanilla, cake-like flavor.  It is totally worth sourcing these little gems.  I bought them in a 2 lb bag from Amazon for a great price.  (Yes, I use them that much).  Mulberries can lower cholesterol levels, are full of vitamins and minerals and improve blood sugar control. They also decrease oxidative stress, which may reduce cancer risk.

Pear adds sweetness and body to the smoothie.  Pears are full of great fiber and are soothing to the gut, so much so that they can help in healing diverticulitis.  If you have trouble pooping, pears are for you.  Just saying…

And ginger adds a warm spiciness that brings this simple green smoothie into the realm of gingersnaps.  So yum!

It’s so green, I know.  But it tastes so good!  Trust me on this.  Plus, would it seriously be any more appealing if it were brown, like a real ginger cake?  Didn’t think so…

Ginger Cake Smoothie

1 c. diced pear

3 T. dried mulberries (or you could use dates…)

1 T. minced, fresh ginger

1 c. baby spinach

1 c. unsweetened vanilla almond milk

1/2 c. – 1 c. ice, to taste and texture

 

Combine all ingredients in a blender and blend until smooth and creamy!
