Ultimate Kale Caesar

20190708_194648.jpgKale can have a flavor that is…intense.  It can be a little bit bitter and definitely “green” tasting.  Here is a delicious recipe to try that makes kale sexy and decadent!

I think kale is such a great vegetable. It grows easily and abundantly in my garden.  It is a leafy green, a great source of vitamins A and C.  It is full of protective antioxidants and is one of the most nutrient dense foods on the planet.

Start with a bowl full of freshly picked, torn kale leaves.

Top with diced fresh tomatoes.

Add a handful of toasted or raw almonds.

The dress with with delicious, salty, savory, sweet caeser-like dressing.  And toss!

Ultimate Kale Ceasar

1 large bunch of kale, stripped from stems and torn into bite-size pieces

1 large tomato, cut into chunks

1 handful of toasted or raw almonds, roughly chopped

Dressing:

1/4 c. almond butter

1/3 c. olive oil

2 T. rice wine vinegar

1-2 T. honey ( to taste)

1 t. minced fresh thyme

1 t. Dijon mustard

1 t. salt

several grinds fresh ground black pepper

1 garlic clove, minced

Layer the kale, tomatoes and almonds in a large salad bowl.

Combine the dressing ingredients in a blender and blend 30 sec- 1 min, until smooth. Pour the dressing over the salad and toss to coat.

Serves 4
