I pick peppermint grown fresh from my garden, and this recipe is worth seeking out the actual herb rather than using peppermint extract. Mint is cooling to the system, aids in digestion and helps with intestinal gas, spasms and cramping. Mint can also improve mental focus, so it’s a great for an afternoon pick-me-up!
Spinach gives this drink the gorgeous green color and lots of good minerals.

Mint Chip Smoothie
1 c. spinach
1 frozen banana
2 T. cashews
1.5 T. cacao nibs
1 T. fresh peppermint
1/2 t. vanilla
1 c. almond milk
1/2 c. coconut water, (optional, frozen into cubes for a frostier smoothie)
Place all ingredients in a blender and blend until smooth and creamy. Serves one.
