Mint Chip Smoothie – Dairy Free, Paleo, Vegan, Sugar-free

Cool peppermint, crunchy cacao nibs in a tall glass of green goodness!  This is a great summer smoothie that packs delightful ice-cream like flavor and a host of health benefits.

I pick peppermint grown fresh from my garden, and this recipe is worth seeking out the actual herb rather than using peppermint extract.  Mint is cooling to the system, aids in digestion and helps with intestinal gas, spasms and cramping.  Mint can also improve mental focus, so it’s a great for an afternoon pick-me-up!

Spinach gives this drink the gorgeous green color and lots of good minerals.

Cashews add creaminess and are a rich source of vitamins E and B6.

Bananas provide sweetness and potassium.

You can use chocolate chips in this recipe, but cacao nibs are crunchier, have a more intense chocolate flavor, and also offer antioxidants.  Cacao is also good for your heart and can help to elevate your mood!

Mint Chip Smoothie

1 c. spinach

1 frozen banana

2 T. cashews

1.5 T. cacao nibs

1 T. fresh peppermint

1/2 t. vanilla

1 c. almond milk

1/2 c. coconut water, (optional, frozen into cubes for a frostier smoothie)

 

Place all ingredients in a blender and blend until smooth and creamy.  Serves one.
