This recipe happened by accident, but has now become a delicious morning staple. It is gluten-free, dairy-free, and sweetened only with apples and raisins.
Yummy and fluffy, and you don’t have to stand over a griddle worrying about whether or not it’s time to flip the floppy things!
They look like giant, soft cookies. They bake up fluffy and moist in the oven, with delightful chunks of tart apple and sweet raisins. No need to add maple syrup, but you can drizzle some on if you’re looking for more sweetness.
Apple Oven Pancakes
8 oz unsweetened applesauce, (homemade is great!)
1/4 c. gluten-free flour blend
1/4 c. sorghum flour
1/4 t. baking soda
3/4 t. baking powder
3/4 t. cinnamon
1/4 t. salt
1/4 c. unsweetened nondairy yogurt (homemade coconut yogurt is what I used)
2 T. coconut oil, melted
2 T. raisins, or chopped figs, dates or cranberries
Preheat the oven to 400 degrees and line a sheet with parchment paper. Mix all of the ingredients thoroughly in a medium bowl. Dollop the batter onto the parchment-lined sheet, 1/3 c. of batter at a time. Bake for 20 min. They will puff and then flatten. Serve warm.
