This recipe is a perfect take-along breakfast. It’s loaded with hearty oats, inflammation-fighting cherries, antioxidant -rich cacao, and omega 3 fats. You can make it the night before and grab it as you head out the door. Plus, it takes like dessert!
Oats are a low-glycemic grain that contain a powerful fiber called Beta-Glucan, which is wonderful for intestinal health.
Cherries have anti-inflammatory superpowers and can possibly help with muscle and joint pain.
Cacao has over 40 times the antioxidants of blueberries and is the best plant-based source of iron that you can eat. It is also a natural mood elevator and antidepressant!
Chia seeds are a great source of plant-based omega-3’s. And an excellent source of fiber.
Layer the ingredients in a small jar.
Pour milk over.
Screw on the lid and give it a shake. Leave in the fridge overnight and wake up to an easy, delicious, decadent, good-for-you breakfast!
Cherry Chocolate Overnight Oats
1/2 c rolled oats (not quick oats)
3/4 c. unsweetened almond milk
1 T. cacao powder
1 T. chia seeds
1/2 t. vanilla extract
1 T. maple syrup, honey or 2 dates (optional)
1/2 c. frozen cherries, halved
Combine all of the ingredients in a small jar or bowl. Stir to combine. Cover and let sit overnight in the refrigerator. In the morning, you can heat this gently on the stove if you like it warm, or top the chilled porridge with desired toppings (more cherries, cacao nibs, bananas etc) and enjoy!
